A rare and preserved terroir for exceptional wines: an estate located at an altitude of 580 metres and nestled in a protected valley on the borders of the Ventoux and Monts de Vaucluse, voluntarily conducted in organic polyculture, a guarantee of the preservation of biodiversity and the presence, on the grapes and in the cellar, of natural yeasts whose quality ensures perfect fermentation.

Six 75cl bottles. 

Harvested and sorted by hand. Fermentation of 6 weeks in demi muid at low temperature, a slow fermentation which allows to obtain the quintessence of these three grape varieties. 12 months maturing in demi muid and barrels, a Burgundian style maturing on lees. 

The nose expresses notes of apricots and white fruits, with white flowers at the end.

The mouth is all roundness, white fruits and a light touch of vanilla at the end.

This wine keeps a long aromatic persistence in the mouth after tasting.

Food pairing: Ideal with salmon with chives cream or with a cheese such as Crèmeux de Bourgogne.

Grape varieties: Viognier 50%, Chardonnay 25%, Roussane 25%.

Alcohol: 14%.
