Vinification : Slow fermentation with temperature control. Ageing : On lees in barrels, muids d'oc, demi-muids and concrete eggs. Bottling : Slight plate filtration (cellulose) natural precipitation during low temperatures in winter.
Intense, complex and spicy aromas where the fruity sweetness and mineral expression of the terroir are subtly blended. Powerful and structured in the mouth, balanced with volume and aromatic persistence. This viognier aged in oak barrels is the result of a unique climate and soil, requiring particular care and work.
Food pairing: This wine goes well with matured cheeses such as Banon, truffles, as well as spicy and creamy dishes. Can be kept for 3 to 5 years.
